I'm pretty excited to eat tonight. First we have pork belly burnt ends going on the LSG 20X42 offset. Apple wood will be the fuel. Later I will have wings going hot and fast on the Weber Master Touch Premium, using the vortex accessory and buffalo sauce to be added when done. I will post updated pictures as the day goes or tomorrow if I get too drunk to post. The belly cut up and seasoned with my own rub. The smoker. All wood (the propane is just for the log starter). The grill getting set for tonight's wings. Vortex These go to eleven. | ||

You guys never showed up. Or I was too drunk to hear the doorbell. Anyhow... Got the vortex going... Pinned the needle... Wings on... I forgot to take pictures of the pork belly process, but after smoking to about 165 internal temp, add butter, brown sugar and honey, wrap and cook until about 205 internal. Glaze with sweet bbq sauce and roast for a few minutes to set. These go to eleven. | |||
