Bottling 3 gal. of "Falls Bounty Cyser" (mead) w/ some friends whom I've been teaching. I'm hoping the acidity is ok.
I'm mainly a beer brewer where you mostly fiddle w/ it before fermentation starts.
Wine seems to require fiddling w/ throughout the process.
Always learning.

I am late as my workday is done. Hope you and all Sig members had a great day and have a great week. My week will be crazy with work; as was all of last week. Happy to have a job I love. I consider it job security being super busy.

Today started off strangely..... The Federal building where I'm at took a power surge last night. At 0600, elevators weren't working, and other building services were not working. In addition, some homeless people decided to "store" some backpacks on Federal space. Small problems to most of you (on the grander scale)!

we told some early workers that the elevators were out of order and they needed to use the stairs....(think 7th floor). Yup, we got cussed at like it was our fault! Everything got sorted out by 0800!

Other than that, it was an easy Monday!
