In my search for the perfect grease to cook with, I thought that I had found nirvana when I began using lard. I've used it exclusively on my cast iron for a long time now, eschewing Crisco as it is some awful stuff.

The only "problem" that I've had with lard is that I would love someone to make a spray form of it for ease of use. One day, while searching online for just that, I came across a page for sprayable duck fat and thought that I'd give it a go.

Well, my can came yesterday and I tried it out this morning with my sausage and fried eggs (both on cast iron). I have to say that this stuff is awesome. There seems to be much more "lubricity" than my beloved lard, and the duck fat imparts a really nice little extra flavor to my eggs.

After just one use, I'm really happy with it. It's a little spendy, but I can see myself sticking with this stuff.

Healthy Fat Tips to Live By

Remember, you do need a certain amount of healthy fat, while at the same time you'll want to avoid the unhealthy varieties. The easiest way to accomplish this is to simply eliminate processed foods, which are high in all things detrimental to your health: sugar, carbs, and dangerous types of fats. And don't fall for labeling tricks designed to hide trans fat content.

In recent years many food manufacturers have removed trans fats from their products. However, the FDA allows food manufacturers to round to zero any ingredient that accounts for less than 0.5 grams per serving. So while a product may claim that it does not contain trans fats, it may actually contain up to 0.5 grams per serving. If you eat a few servings, you're quickly ingesting a harmful amount of this deadly fat. So to truly avoid trans fats, you need to read the label and look for more than just 0 grams of trans fat. Check the ingredients and look for partially hydrogenated oil. If the product lists this ingredient, it contains trans fat.

After that, these tips can help ensure you're eating the right fats for your health:

Use organic butter (preferably made from raw milk) instead of margarines and vegetable oil spreads. Butter is a healthy whole food that has received an unwarranted bad rap.
Use coconut oil for cooking. It is far superior to any other cooking oil and is loaded with health benefits. (Remember that olive oil should be used COLD, drizzled over salad or fish, for example, not to cook with.)
Following my nutrition plan will automatically reduce your modified fat intake, as it will teach you to focus on healthy whole foods instead of processed junk food.
To round out your healthy fat intake, be sure to eat raw fats, such as those from avocados, raw dairy products, and olive oil, and also take a high-quality source of animal-based omega-3 fat, such as krill oil.

As for how much fat you might need, government guidelines are sorely in need of reconsideration. The National Institutes of Health (NIH) recommends between 20-35 percent for adults, and 25-35 percent for children between the ages of four and 18. The US Department of Agriculture's dietary guidelinesv are even more ill-advised, recommending you to consume less than 10 percent of calories from saturated fats.

As I and other nutritional experts have warned, most people actually need upwards of 50-70 percent healthful fats in their diet for optimal health! My personal diet is about 60-70 percent healthy fat, and both Paul Jaminet, PhD., author of Perfect Health Diet, and Dr. Ron Rosedale, M.D., an expert on treating diabetes through diet, agree that the ideal diet includes somewhere between 50-70 percent fat.

I don't think there's any problems with cooking with EVOO at moderate temperatures. It's excellent for sautéing mushrooms or veggies.

That whole article is highly suspect.

Dr. Mercola is an alternative medicine proponent, likes homeopathic remedies, is anti-vaccination, and his whole shtick seems to be built around convincing people to buy the supplements he sells.

It's fine to cook with olive oil, actual scientific studies indicate that coconut oil is NOT some miracle super fat (it has more saturated fat than basically any other commonly available fat - while it increases HDL ("good") cholesterol, it also substantially increases LDL ("bad') cholesterol), and mainstream medicine and nutrition experts would be horrified by a 60-70% fat diet.

That is because he has studied other doctors findings and research of medical studies to use drugs only as the last resort.

OP, do you like the taste of duck? Does this spray tastes like duck?

I like duck. Somehow, my wife makes sure I don't eat too much of it but I do eat it regularly throughout the year.

I still remember Remo Williams from the Destroyer paperback series talking about eating duck and the duck fat he forced out from his body with his perspiration. (Not that you would have read those novels.)

Appreciate the reminder. I am low on duck fat, it is wintry, time to roast a delectable duck. I was unable to find duck fat anywhere near me which means roasting one myself. Win Win

I also started using avocado oil recently, as it is available in local stores now. It has a smoke point of 520 degrees. Avocado oil is healthy and good for searing, frying, grilling, roasting, baking and salad dressings.

I found another cast iron pan brought home from Japan still in the box recently and used avocado oil to season it. Very nice slick hard surface, Teflon should be so good.

I do like duck. Unfortunately I don't get to eat it much these days as the hunting for them here kind of sucks. Back in college years ago, we used to hunt the hell out of them and I pretty much lived off of duck one quarter. Ran out of ways to cook it and began making jerky with it which was really good too.

As far as the spray, I can't say that the flavor is so much duck. It's kind of hard to describe. Just a nice subtle rich flavor.

It is common knowledge that the flu vaccine is developed each year based on educated guesses about what strains will be prevalent, and that sometimes they get it wrong.

Mercola's stance on vaccines is broader than that.

I really enjoy tortillas that are made with lard, but my wife would have a hissy if I started cooking with it.
The spray duck fact sounds great, but again I would have to cover the can with a Pam label.

Why not keep a variety of ingredients to cook the variety (I would hope) of food you eat?

Lard, Tallow, Duck Fat, Olive Oil, EVOO, Coconut oil, Canola Oil, Grapeseed Oil, etc, all have their place. Different oils have different flavors and cooking properties. Duck fat fries are fantastic, except when you want the fries to taste like truffles. Eggs are great with smokey bacon lard, except when I want them buttery to complement the creme fraiche and caviar.

Tools in the tool chest. More tools, better fit for more specialized projects.
