It’s believed that HIV (the virus that causes AIDS) “spilled over” from some sort of primate, possibly chimpanzees, but through butchering and handling, not likely eating raw meat. Any open wound that a hunter might have that was in contact with the meat could have caused the original infection. It’s been reported that nothing more than a contaminated needle stick could result in infection with HIV.
I have never read that native Africans eat raw “bush meat,” but if they’re like Americans who like nearly-raw beef, it’s quite possible that they consume meat that’s not cooked enough to kill all viruses.

I am not a medical professional, but I am fascinated by the subject and read almost everything I run across about the spread of serious disease from animals to humans. Spillover: Animal Infections and the Next Human Pandemic is a little dated (2012) because things are discovered and tend to evolve so rapidly, but it’s nevertheless a good book.

“Edible”? I would say that depends on the consumer’s tastes. Safe to eat is another matter. I am no expert, but I suspect that because those people died of plague which is caused by a bacterium, the usual advice of at least 165° would apply.

If I can reall correctly...We had a guy die of bubonic plague here in Montana maybe ten years back. He had skinned a bobcat with an open wound on his hand. Was infected and died shortly thereafter.
