You just have to try them. Its kinda like a hot dog vs a ribeye.
This is how I usually make mine. I will muddle oranges and cherries on occasion as well. 3oz of bourbon ~1oz simple syrup/cherry juice from the jar Cherry bitters Orange slice if I have them
I have little drink smoker I use from time to time as well.
I make cubes with this mold. Works really well and you can fit 16 cubes in a 1 gallon zip lock bag.

I’ve been struggling with this for over a year. Started making more of a whiskey sour, maple syrup and lemon juice. Then moved on to old fashioned. I discovered Smokeshow mixology on FB and decided to try a bottle. I like it as the ratio between simple syrup and bitters is consistent and I can focus on the amount of bourbon and the mix. I either use cherries with a bit of the juice or orange liqueur. I found it’s like developing a load for your rifle. The amount and type of bourbon matters, along with the amount of everything else you put in. It’s cool that you can tailor them to your personal taste!

It took me about 8 months (that's around 150 Old-Fashioneds to you and me! ) before I nailed perfection! I moved pretty quickly to using 3 oz. of Bourbon, as 2 oz. seemed like a small drink anyway, plus the consumption time for the 50% larger drink optimized the timing of the ice melt. Five months into my 'load development' I had one (actually two Old-Fashioneds!) out at a cigar bar that had Luxardo Cherries along with Orange that were muddled together, and that changed everything for me! During that time I mixed with Buffalo Trace, Jim Beam Black, Knob Creek, Wild Turkey 101, and Woodford Reserve before I landed on MY 'New England' Old Fashioned. Now I've got it down to a science...Cheers!

I made my first Tequila Old Fashioned last night and it was really good! I made it a tad too sweet, but overall I plan to have more! I used Casa Migos Anejo tequila, amber agave nectar and 3 dashes of bitters.

You are exactly correct. So far each one I make is different and getting better. Just made one a few minutes ago, but a little too much cherry flavor as I added cherry juice. I also expressed and put in a lemon peel and can taste it. Tomorrow my Luxardo cherries come in. After I finish off the Rye whiskey I have, I will try another brand.

I'm going to throw a wrench into all of this and suggest our tastes change over time and perhaps even what we've had to eat, our hydration level, the ambient temperature and the relative humidity.
As long as it's palatable, I'm all for tasting the difference and enjoying it. Next one might be better.

Today I got my Luxardo cherries so of course I had to make one. These are the ingredients I am currently using. I am waiting on my cedar syrup to arrive.

So I screwed up and messed up my original thread on this question so I thought I would post it again.
So what is the difference between a Luxardo Cherrie and a regular Maraschino Cherrie beyond them being 4x the price difference? I am just using regular Maraschino Cherries.
ETA: I answered my own question after an AI search and I will see if there is a noticeable difference.
OMG now I see it. There is no comparison between a Luxardo cherry and a regular store one. The taste is so unbelievably different!!!

Tonight I'm having an Old Fashioned made with 2 shots of Henry McKenna 10 year bourbon, half a shot of Proof Smokey Bacon syrup, a slice of orange peel, a Woodford Bourbon cherry and a dollop of the cherry syrup. All stirred and in a nice glass with a big ice cube.
Very tasty!

Yeah. I use one demerara sugar cube. With 2 oz of bourbon it's too sweet. 3 oz makes the first sip boozy, and the drink transitions towards the end when the last sugar hits, kicks off the endorphins and makes your brain say "I think I'll have another".
It's what I like about the Old Fashioned. It's why I never use simple syrup. They syrup makes the drink uniformly sweet. Using sugar means the first sip hits you in the mouth and says "booze". The last whispers sweeet nothings and wants to repeat. Just finished a repeat myself.
