The quarter returns. NY strip steak and reverse-sear method discussion.


1.03lb USDA Prime natural Angus top loin NY strip boneless. Kosher salt, fresh ground black malabar pepper and into the oven at 250 to reverse sear to medium rare. I know, heresy to not do it on the grill this day, but I like my results with the reverse sear better. Hopefully I won’t screw it up and the after pics will do the talking, lol. Wink

You most definitely can still use the grill for the final sear. Hope she turns out delicious.

Thanks, sure did. My grill is dead rusted out, and I could have gone for the cast iron sear and butter baste but we had our hands full with our five year old (pulled it 135 instead of 127 because of... difficulties). So it got the kitchen blowtorch, painted the sear on, and I’m not mad at the results. My wife won’t eat less than medium anyway. Threw a few slices of butter on it and foil wrapped it for the ten minute rest and it is absolutely delicious and tender.

Thanks, Todd, I hear you. And geez... I can’t imagine thread-shitting what you describe. I guess I’ll just enjoy the steak.

Neglected to mention I picked it up yesterday just as they were clearancing it for 30% off as today was the sell-by date. $12.65 out the door. It won’t go to waste. Smile

As long as it tasted great, who cares what other people think. The steak in the picture looks pretty damn good, and I'd never have thought it came out of an oven.

Looks great! I would have opted for the cast, but I'm sure it tasted great, $13 a pound for Prime Strip is a hell of a deal, that is normal pricing for Choice in my parts. Also there's nothing wrong with a Med steak, I'm happy any where in spectrum of Med-Med rare.

What are you using for your torch? I wouldn't call mine a kitchen torch or use it in the kitchen. I'm using this Bernzomatic, I only use it outdoors through.

Wow, you can sure cook a steak. I used to *wow* a special friend with a decent steak once in a while (RIP, sweetie). Nothing beats cooking up the perfect steak for your loved ones.

Nice steak! Perfect temperature. NY Strip is my favorite steak by far. I have always wanted to try the technique for cooking.

We have a small, old time butcher shop we deal with for all of our meats. Sawdust on the floor and everything.

NY Strip is a fav of mine too.
Looks good on outside, however the inside cut is not exactly what I would have expected with a proper reverse sear (note: to tatortodd - not shitting on - only an observation).
But pics can be deceiving - ultimate test is the taste!
Nothing wrong with a NY Strip.

Busy riding the motorcycle, hanging the flag, swimming in the pool, then an afternoon nap followed by dinner, fireworks and a cigar..

Nice job on the steak, now fix the grill grates
just go on amazon and have them at the front door a day later, you don't even have to leave the house!
