Gravy is one of those things that will cool extremely fast once poured over something. Especially on a cold plate.
That's why when I have biscuits and gravy at home, I usually come close to burning my mouth because I realize the clock is ticking once it's poured.
The BEST gravy is the one you make yourself. Most restaurants can't or won't make good gravy anyway.

There are regional differences. You cannot get sweet iced tea up North during the winter. Absolutely forget good gumbo. Sometimes it has to do with how many orders there are.
Finding a good roux is difficult as well.

Funny you should mention it. I went to the Black Bear Diner near here for breakfast with my son this morning. Local chain I think. "award-winning chicken fried steak." Well the award must have been "most disappointing frozen/fried chicken fried steak with cold gravy" because, damn.
House potatoes recommended by the waitress were cold. Like, not luke warm. Cool to the touch. Pancakes were cold. And we waited like 25 minutes after ordering in a mostly empty restaurant. My son was like... when do they bring the food, dad?
I guess they were waiting for my food to get cold and then bring it out.
Very strange.

Black Bear, or Big Fuckin' Biscuit as we call it, isn't known for good food, it's got a lot of food, hence the name Big Fuckin' Biscuit.

The better restaurants will have plate warmers or keep plates on shelf above stoves to stay hot (like one place I worked at). Same goes for salads and cold apps, the better places will use chilled plates.

And what's the deal with Ham ? It's gotta be the absolute best conductor of heat on the planet.
I heat the 9 lb. ham to the correct serving temp I warm up the serving platter to insure the ham stays warm longer. I even found a cover to place over it .
But Before the 4th person is served the dam ham is close to room temp. (70 degrees)
What does a guy have to do set the serving platter on a griddle ?
