I had corn dish called Esquites the other day that was tasty


Ok, I just looked it up, it's the same damn dish but Esquites is just off the cobb and served in a dish

I made Esquites in the past for a gathering, but used canned corn. It turned out fantastic. So much so, I had to share the recipe numerous times. I used a mixture of canned white corn, yellow corn, and canned "fresh off the cob" sweet corn.

I like my corn nekid. I tried the Mexican corn at fairs and while interesting, it doesn’t grab my attention.

Try it on your grill in the husk.
Cook medium heat for 10-12 min, (may vary) rotating the corn every 4 min or so.

When the outer husk has darkened a bit, remove, peal, and add:
-mayo, instead of butter.
-cotija cheese (mexican parmesan) sprinkle on all over
-Tajin spice, several dashes all over.
-lime squeezins
-cilantro (optional)

The corn I get is really good to begin w/ and really doesn't need the extra treatment but if you eat a lot of it in season, it's nice to change it up a bit.

Now I'm hungry.
