Most people think it has to do with checking for gold content...which is a bit amusing because the medals aren't gold. They are 92%+ silver (like the Silver medals) and plated in gold (>6 grams, by regulations)

My understanding of the reason you'll see winners biting their medals is because photographers ask them to "do something"...in addition to just holding their medals

The practice dates back to the late 19th Century. Counterfeit gold coins were a problem from about the Civil War era to the Depression years. The real US gold coins were 22K (roughly 90% pure) and could easily be marked with the teeth, whereas the typical counterfeits were made of lesser metals and gold plated, thus considerably harder.

Biting the coin is essentially a way of saying "Is this real?" In the context of the Olympics, the athletes are demonstrating the surreal nature of achieving a difficult goal after many years of effort.

Also probably being prompted by the media photographers looking for another shot to be publicized.
