Canning and food prep
First batch of bread and butter pickles from the garden to stick on the shelf for the winter.

The brine


The cukes and onions soaking in salt/ice


Mixed together and brought to just a boil


Packed in jars and into the steam canner for 15 minutes


Finished product


Tomorrow is sweet relish. Then I've got to get started on green beans. I'm swimming in them.

Just put up what's probably the last of the tomatoes for the year yesterday. Those pickles look delicious. I didn't do cucumbers this year. Have enough zucchini for the town though. Think I'll hit the farm market to sell some and can the rest. I just blanch and freeze the green beans. Usually only get through till about January with them and then, with any luck, venison will take their place in the freezer.

Peaches are done, pickles are canned. Our chickens are about 7 weeks out from processing and we will make broth from the backs and necks and can it. Soon as the apples are ready to pick, we will put up apple sauce.

When my wife was vending at our Farmers market, she had a customer who paid good money for all the chicken feet Pam would sell her.

Peaches are done. Hoping to get the elderberry jelly and medicinal syrup done in the morning. Still have beets and green beans to finish up. I think I'll freeze dry the beets this year.

Apples will be here in two weeks.

I've got about eight gallons of honey out in the hives to process as well. It's going to be a busy few weeks.
