Cheddar & Crispy Potato Crusted Boneless Skinless Chicken with Parmesan-Roasted Butternut Squash and Poblano Peppers ... Chipotle Ranch Dressing on the veggies. Green onions in the mix. I'm not rich enough to say that cheese is the only cheddar I want or need, but after a few bites of this delightful dinner, I just might reconsider ... maybe. Bon Appetit Smile

Salmon with Dill Crema and Green Beans Amandine ... Way back when, Europeans believed that dill warded away witches and defended against spells. Dill crema dots every bite with delight and I will sleep well knowing I will awake to find I've not turned into a toad. Green beans roasted with garlic, grated parmesan and almond slices. Crema consists of sour cream, dill, lemon juice, olive oil and lemon zest. Hocus-Pocus Bon Appetit Smile

I make a salmon similar to this frequently. My dill sauce includes a little dab of horseradish in addition to your other ingredients. Gives it just the perfect flavor IMO.

Hobbs ... you know (or should, I've posted about it) I've been on the Nutrisystem diet since October 1, 2018 ... I have lost 33 pounds but in this last month I've only lost 2 ... and I think its your fault ... I'm sure that I'm gaining weight just looking at your delicious meals!

This is not to say you should stop by any means ... I just thought you should know.

Actually I'm weaning off the Nutrisystem meals, I've still got 12 pounds to go but the going is slower now that I have to actually think about what to have ... not to mention that my body is getting used to my calorie intake and fighting me on these last few pounds!


If you really want something you'll find a way ...
... if you don't you'll find an excuse.

I'm really not a "kid" anymore ... but I haven't grown up yet either Wink

So confusing! Whatever the cheese is called, its funky taste melds perfectly with umami mushrooms, minced shallots and light cream coating the succulent chicken with the best of flavors. It's elementary, there's nothing so elemental as the cheese called Emmental. Bon Appetit Smile
