I came across this image of barbecue from Franklin Barbecue, Austin TX. Reminds me of a place in Amarillo which also sells by the pound.

After eating a plate like that, three pounds meat, I'd eat salad for a day or so. Here's a pic from 2001 of a salad I made for Fathers Day, I think.

Franklin is one of THE hot barbeque joints in Texas right now. People wait in line for hours. (And yes, there are hot barbeque places that people will drive a hundred miles to visit. We like our brisket.)

It is supposed to be very good, but there is other good barbeque you don't have to wait three hours to get.




The fish is mute, expressionless. The fish doesn't think because the fish knows everything.

Thanks for the tip. It's "starred" on my road trip map.

Of course, maybe a box of donuts for the next day's drive as well. I'd pick them up first, then barbecue.

Yes Franklins BBQ is good, but not worth the wait in my opinion. I have had it from people willing to wait. It is good, but there are other places just as good without that wait.

The turkey, maybe I'd skip. Take it home for a sandwich.

I ate at Rudy's in Amarillo. That's a chain, but they did the "by weight" thing, and it tasted pretty good to me. Also on that trip in 2014 I finally got off the Interstate and hit Missouri Hick in Cuba (Missouri). Well worth the detour!

I've been practicing for years. Cannot yet recreate mom's brisket from the 1980s. She says -modestly- you can't buy meat like you used to, layered with fat like back in the day.

What grade are you buying (prime, choice, select, or standard)? Prime grade is nicely marbled and my local (Texas only chain) grocer sells prime grade brisket.

Competition bbq teams have been buying Wagyu grade (subset of Prime).
