And yes, I will continue to legally and responsibly consume insignificant amounts of alcohol while still retaining a tool that could very well save my life.

As far as being "impaired" with a BAC of less than .02.... Read a few publication in medical journals, not the kool-aid that MADD feeds us, and you will see that the "possibility" of impairment begins at .02 BAC.
Have you ever heard of the Widmark Equation? (being that you are retired from the armed forces, I will believe that you will answer truthfully) If you haven't heard of the highly published theory, then I greatly question your level of experience with this topic.
It is pointed out in the chart that you posted that impairment doesn't even "begin" until you reach a .02 BAC.
I have performed extensive research in the field and it has been proven that if you get less than 6 hours of sleep in a night that it can affect coordination, reaction time and judgment, they said, posing "a very serious risk." (similar to an impaired level of .05 BAC). Some studies, paid for buy MADD advocates, state that there is "partial evidence" of impairment at .02 BAC. They never nail it down. As you have admitted, it is "not black and white"; this is due to the lack of scientific proof.

Will one less box of ammo, this month, kill you?
No, but the money could save a child's life...

When did the law change? It used to be legal to carry unless you were "intoxicated".

Q: Can I carry a handgun when I am drinking?
A: Under the concealed handgun law, it is illegal to carry a handgun if you are intoxicated. The best idea is to leave your weapon at home if you intend to consume any alcoholic beverages.

We've decided that we're going to plan a night sometime in the next month or two.....and do some experimenting to see just where our limits are according to the alcohol tester.

Hopefully you will use better judgment that the young Deputy DAs here some years ago who, after being at a large party all afternoon, decided to drive down to the police station to see what their BA levels were.

For all those who even if they have one drop wont carry, do you do the same about driving?

To be honest I dont think getting intoxicated is the same thing as having one or two drinks. To be honest I dont drink but once a year. Either way I cannot carry as state law does not allow for it. However I think it is silly to ban carry if the place serves alcohol. They should also not allow bars to have parking lots by this logic.

Intoxicated is at the discretion of the officer. If so inclined, he can consider you intoxicated if he smells alcohol on your breath.

If the only evidence of intoxication an officer offers in court is that he "smelled alcohol on your breath", the judge will facepalm and tell him to quit wasting everyone's time. Alcohol on your breath is a sign that you've consumed alcohol, it isn't proof that you're intoxicated. I have heard of people being arrested for DUI at .04 because they showed signs of being intoxicated.

Everyone should keep in mind that the laws of the several states on this issue can vary wildly. What's true in one state may be, like, totally bogus in another. Best thing is to go to the local library and get the reference librarian help you look up the statutes that apply in your state and read the law yourself. Then if you still have questions, check with a local attorney who knows about such stuff (and can tell you for free off the top of his head).

If I plan on haing a drink then the gun stays at home. I don't generally drink in public though I personally like having my drinks at home away from the annoying drunks of bars.

The .04 could be reasonable here in NH if you hold a CDL then your limit becomes .04 so that could account for those arrests.

I think a good case in point are the cops that were in the tavern up at bike week. See how that turned out?

Alcohol and guns don't mix. Every owners manual I have ever had says so. If you chose to do so, its your judgement. I just don't think its a good idea.
