My wife watches his videos regularly so I overhear them often. He can be quite funny at times, especially when he talks about anyone who would deign to use canned Parmesan cheese. And he does like his cayenne pepper.
Chef John has a great personality and is fun to listen to, he's the polar opposite of the egomaniacs on most TV cooking shows.

I have several of his recipes from Allrecipes.com
I find his videos educational and entertaining.
ETA: I think this has to be one of the first, very basic, easy and rewarding recipes I made of his.
Or, this very basic chicken and mushroom.

I taught myself how to bake bread in the pre Internet, no Youtube days. Boy, folks these days have it easy. He does a good job with showing the basics.
