I like Waylon’s covers of Elvis.
Pretty Much everything by Leo
Do you only play? Or can you shoot too?
I post this one as a semi joke... because most people liked it more than the original.
One I always think of... while I'm not a fan of the Dixie Chicks, I like this one more than Fleetwood Mac.
Sliced bread, the greatest thing since the 1911.
"Ticket to Ride", written by the Beatles, performed by Carpenters.
ACCU-STRUT FOR MINI-14
"Pen & Sword as One"

CAS, I was going to post the Dixie Chicks version of Landslide. That's a good one. Too bad they "self-destructed".
I'd also include: Crosby, Stills, Nash & Young's cover of "Woodstock" Written by Joni Mitchell
Indigo Girls: Romeo and Juliet (Dire Straits)
Indigo Girls: Uncle John's Band (Grateful Dead)
NRA Range Safety Officer
NRA Certified Instructor - Pistol / Personal Protection Inside the Home
Hazy Shade of Winter from The Bangles.
I always prefer reality when I can figure out what it is.

"My rule of life prescribed as an absolutely sacred rite smoking cigars and also the drinking of alcohol before, after and if need be during all meals and in the intervals between them." Winston Churchill
The three that come to mind for me have already been mentioned, but I'll second them:
Hendrix: (Dylan's) All Along The Watchtower
Clapton: (Bob Marley's) I Shot The Sheriff
CSNY: (Joni Mitchell's) Woodstock
EDIT: mikeyspizza below reminds me of Cocker; he did so many great covers it's hard to know where to start. In addition to mikey's choice, think of Cry Me A River, for example. I love the classic renditions, too (Julie London, for instance), but his take is amazing. Just look up the YouTube video from the Mad Dogs tour.
And, yeah, Johnny Winter doing Highway 61. Good stuff.
And, come to think of it, turnabout is fair play; Derek and the Dominoes doing Hendrix's Little WingThis message has been edited. Last edited by: amals,

Some good ones already mentioned, namely Clapton.
My contribution is that I think Chris Isaak’s Solitary Man cover is better than the original.
