What covers of songs do you like as well or better than the original?
I'd like to compile a list.

I’ve always been a fan of Emmylou Harris’ covers, and here are several that I think she does a beautiful job with: Pancho and Lefty—TVZ The Boxer—Paul Simon Racing in the Streets & The Price You Pay—Springsteen Till I Can Gain Control Again—Rodney Crowell
Watchtower, Hendrix of Dylan
Hallelujah, J.Buckley of Leonard Cohen

Just a few not already mentioned:
Joy Division/New Order: Ceremony covered by Galaxie 500
Pink Floyd: Astronomy Domine covered by VoiVod
The Byrds: Eight Miles High covered by Hüsker Dü
The Beatles: Helter Skelter covered by Siouxsie And The Banshees (think I murdered the spelling, but this is a "done from toilet" post)
I'll post up a few more later, normally I'm all over questions like this.

My favorite covers are not karaoke performances, the artists make the covered song into their own. Enough so that fans have no idea some of these songs are actually covers.
Satisfaction- DEVO (Rolling Stones) Hurt- Johnny Cash (Nine Inch Nails) California Man- Cheap Trick (The Move) You Really Got Me- Van Halen (THe Kinks) (What's So Funny 'Bout) Peace, Love and Understanding- Elvis Costello & The Attractions (Nick Lowe) The Alabama Song- The Doors (Brecht/Weil)

There's a Russian group, Leonid & Friends, that does an amazing job with old Chicago tunes. Here's an example...
"If you’re a leader, you lead the way. Not just on the easy ones; you take the tough ones too…” – MAJ Richard D. Winters (1918-2011), E Company, 2nd Battalion, 506th Parachute Infantry Regiment, 101st Airborne "Woe to those who call evil good, and good evil... Therefore, as tongues of fire lick up straw and as dry grass sinks down in the flames, so their roots will decay and their flowers blow away like dust; for they have rejected the law of the Lord Almighty and spurned the word of the Holy One of Israel." - Isaiah 5:20,24
