Being a Stargate Atlantis fan, if you travel out farther like the Pegasus Galaxy, the farther you get the whiter they seem, like the albino-like Wraith..

They weren’t white...they were greenish.

Good, I'm not the only one that noticed that error.

There's nothing (in the tv show, at least), that indicated she ever served on that class of vessel (most famous example being Enterprise D).

Voyager is, of course, an Intrepid class ship.

And before anybody else says it, that's "Enterprise D," not "Enterprise D-cup."

This. The Borg didn't assimilate everyone. Ones that they thought weren't a benefit were simply killed.

In fact, by the time Voyager returned to the Alpha Quadrant, the crew of the Enterprise was already serving aboard the -E. That doesn't mean she couldn't have later served aboard a Galaxy, but they were no longer the flagship of the fleet.

For the most part they ignored anybody they thought was not a benefit to the Collective, as they were also not likely a threat. Why waste energy destroying an ant hill across town?
