Multiple suggested possible causes. Were I in your shoes I'd start with the easiest thing to test and eat beef from another source. (No Taco Bell). If all is well, eat something other than the beef in question, with the exact same marinade. If no explosions, you know it was the beef. If things get explosive, you'll know it was the marinade.

one thing to consider

when the meat is marinated, and then cooked, is the marinade disposed off?

as in take the meat out of the bowl, dish, bag whatever, toss the contents after,,

bacteria etc will build up in marinades , they should be tossed and not used on any cooked product,

you mentioned a local source,

do they have any type of certification or inspection from the USDA or State Health dept?

I cannot remember the regs on small farm operations re cow processing and if an inspector is required on any small operation, and wondering if the processing area is clean,,

however , usually unclean prep of both the cow and area are noticed first in ground beef,
