Cambodia is "meh." It's good as an add-on destination to Thailand and Vietnam, but wouldn't spend more than 3 days there. 2 is enough if you are high-energy and can tackle a lot of stuff at a time.

Cambodian food is kind of a melting pot of the region with influences from both South Asia and Southeast Asia. The food doesn't have the same bright flavors stereotypical of Thailand or the subtle herbal fragrances of Vietnam, or even the deep aromatic hits of India. Just kind of a muddied mixing of everything.

The countryside looks just like the rest of southeast Asia, and the people there are just as friendly and welcoming as anywhere else. Tourism is quickly developing, following in Thailand's footsteps, but still feels slightly more undiscovered and authentic than Thailand.

The temples at Angkor Wat are cool, but that and the surrounding temples are pretty much the main draw for tourism. They're interesting to see, but quickly become looking at a lot of the same thing. It's also interesting to note that even though they look "ancient", they're about the same age as the Cathedral of Notre Dame in Paris. Kinda lessens the cool factor a bit that it's simply ancient looking because they haven't been maintained.
