The ever so famous Franklin BBQ has caught fire early this morning. Sounds like just a pit fire and escaped serious damage. Thank God! No reports of injuries.

The timing was pretty good. I imagine the line would have been mighty short, and awfully miserable, the next few days.

That's unfortunate, he makes a damn fine brisket, best I've ever eaten. He'll get back on his feet no doubt about that. You play with fire, you occasionally will get burnt. Fortunately nobody was hurt, just some smoke damage and charred plywood.

Unfortunately, I've heard from other BBQ aficionados that the city of Austin has has been going after various BBQ purveyors the last several years, citing and even shutting down those who are smoking up neighborhoods who aren't too keen to the fine delicacies of smoked meat. Hopefully Franklin's fire doesn't create more onerous laws and regs that restaurant owners need to comply with. His high-profile certainly is going to perk the ears of a do-gooder councilman to craft a law...because SOMETHING has to be done.

I was there in June. I wonder if the fire department had a hard time clearing the line?

I heard what may be an urban legend but I will continue to believe it's true until proven otherwise. Seems Kanye West showed up and tried to hop in front of the line. He told the guy working the line that he and Franklin were buddies and that Frankilin would let him go to the front. Line guy says "wait here", leaves and returns with Franklin. Kanye explains his plight and Franklin looks at the line and says that Kanye better get in it if he wants a chance to be able to eat that day.

Again, don't know if it is true, but I choose to believe it.

The pit is in a separate building from the dining area. Only minor smoke damage to the main restaurant. He could open tomorrow with a trailer pit.

I'd like to read that story. I'd let someone cut in front of me if they bought me $220+ of brisket from Franklin BBQ.

I have had pit fires before. Not much you can do about them except shut everything down. I just had one about a month ago. My grease drain had been plugged and I didn't notice so I had a grease build up.
I first noticed the thick billowy smoke coming from the stack. As I got within 10 feet of the smoker I could hear the fire howling inside the smoker. I knew then what was going on but I had 4 briskets on and I didn't want to lose them.

I quickly grabbed my welding gloves. I used my fire poker to pull the shelves out and then grabbed them with my welding gloves on while the flames were leaping out of the door.
I did manage to save all the briskets although the bark was a little crunchy.
Any way I can see how a pit fire inside a building can get out of hand very quickly.

I have seen his smokers. There's nothing pretty about them. Old 500 gallon converted propane tanks. Rusty crusty things. The health department must be pretty relaxed in Texas because in Minnesota they would never let you serve food off of what he cooks on.

He is going to start selling a line of smokers in 2018. $2500 a pop and they will hold 3 briskets. I wonder if they are going to have the patina of the ones he cooks on! Wink

Also he banned professional line sitters a couple years ago. If he sees you in line everyday but never sees you eating the restaurant he kicks you out of line.

IIRC, I believe he bought them from another legendary BBq guy who was closing.

Actually, that "grunge" is part of the mystique. If I walk in a bbq joint and it is gleaming stainless steel everywhere, I leave. All of the best ones look like they were started 150 years ago and in use every day since.

Hahaha!

I agree with JALLEN though, any BBQ place worth it's salt is going to be a little smokey, and the pits show have that "grunge" as he says. Even better if I have to walk through the pit area to order by meat prior to going inside to order sides/pay. Cooper's in Llano is this way, as is Smitty's in Lockhart, two of my favorites.
