Haven't fired up the smoker for quite awhile. Been ice fishing most weekends but this weekend I didn't go fish chasing so I decided to smoke something up. Had a couple racks of beef ribs laying around and decided on some no boil bacon mac and cheese to go with it.

Beef ribs all rubbed up waiting for the smoker to reach temp.



About 4 hours later they look a bit different.



The no boil smoked bacon mac and cheese. Nice not having to boil the mac first.



All plated up and quickly devoured. No protection needed as the bears are hibernating this time of year and don't try to sneak in my garage and my very loyal dog not pictured was very near by!



Best part was I had the entire day to myself as the wife is out at with her lady friends. Very relaxing being able to tend the smoker again and top it off with a couple beers and a excellent Make America Great Again BBQ dinner. Hope you all are having a great day as well.

I love these threads since I don't cook much. But damn they make me hungry.

So it's right after dinner and all of the sudden I feel hungry again! Looks good!

What temp on smoker did you use? They look good.

250 until the ribs were done then bumped it up to about 275 to move the mac and cheese along. Because I didn't boil the mac first it takes awhile to finish at 250 bumping it up to 275 finished it off while the ribs were resting.
