Converting a DAK trigger to DA/SA won’t require a new sear.
It’s also unlikely that the grip plates will have to be changed. I have never seen factory plates that weren’t compatible with the DA/SA decocking lever other than the very rare “slim” P229 DAK version.
And lastly, the hammer strut pin is usually supplied already installed in the DA/SA hammer.

What about converting a DA/SA to DAK? New sear? Sear spring?

If changing from DA/SA to DAK, the sear spring should be changed; the DAK spring is not as powerful, and that reduces pull weight slightly.

The sear would not have to be changed if the later version is in the gun, as it probably is if the gun is DAK-compatible to begin with.

As a followup to this, since these threads have a tendency to stay around for a while, the P224 grips/grip plates are NOT compatible. The DAK (both E2 and G-10) overlap the decocker travel space, as you can see circled in red in the picture. In addition, the shown DA/SA decocker side grip plate has machined openings on the back side to provide space for the decocker and spring. As an FYI, the upper P224 is a converted DAK to DA/SA with SRT, including a drilled second hole for the two-post decocker bearing. Although you can use the single post P-series version, it allows rotation/play that is eliminated with the two-post bearing.
